Ken’s Salsa Recipe
Ken’s Salsa Fresca!
1 Small Onion
1 Bunch Cilantro
1 Clove Garlic
Jalapenos (from 1-? I use 4-6, non-hornists use 1 or 2…)
2 can’s Petite Diced Tomatoes (1 regular, 1 w/garlic and Olive Oil) or 5 fresh tomatoes
3Tbs Olive Oil
2Tbs White Vinegar
1-2 Tbs Lemon Juice (fresh if possible)
Combine 1st four Ingredients (Onion, Cilantro, Garlic, Jalapeños) in food processor until chopped fine. (Taste the Jalapeños to determine the heat intensity to figure out how many you want to use!)
Add both cans of Tomatoes - pulse processor until desired consistency (if you like it chunky - then skip this part)
Pour into bowl, add remaining ingredients and mix thoroughly.
WASH HANDS - If you’ve worked with Jalapeños before you’ll already know this… if you haven’t, and you wear contacts, or are a guy…. you’ll know why I say this!
